MICROWAVE CHICKEN, VEGETABLE &
RICE
 
4 boneless chicken breasts
1/4 tsp. garlic powder
1/4 tsp. basil
2 c. cooked brown rice
1 (16 oz.) pkg. frozen green beans
1/2 c. chicken broth
Pepper to taste

Place chicken in microwave safe dish. Sprinkle on garlic powder and basil. Cover loosely with wax paper. Microwave on high 6 to 8 minutes. In high sided 2 quart square dish layer rice on bottom, chicken in center, green beans on top. Pour broth over all, microwave on medium high (70%) for 6 minutes. Serves 4.

Conventional Oven: Prepare chicken as above. Place in 2 quart casserole dish. Pour chicken broth over chicken. Cook 30 minutes in 350 degree oven. Add layers of beans and rice and bake until heated and tender.

Since microwave ovens vary in power, you may need to adjust your cooking time.
