CHINESE PEPPER STEAK 
1 lb. round steak
1/4 c. butter
1/4 c. onions, chopped
2 lg. green peppers, cut in strips
2 tbsp. pimento, chopped
1/2 c. celery, chopped
3/4 tsp. pepper
1 can beef consomme
1 tbsp. cornstarch
2 tbsp. water
2 tsp. soy sauce
3 c. cooked rice or 1 c. uncooked

Cut steak in strips and brown with onions. Add next 7 ingredients. Cover and cook until meat is tender (30 minutes). Blend water and cornstarch and put in meat mixture. Cook uncovered for 5 minutes. Serve on rice.
