BUTTERSCOTCH PIE 
1 box brown sugar
6 tbsp. butter
5 tbsp. flour
2 tbsp. thick sweet cream
3 egg yolks, well beaten
2 1/4 c. milk
4 egg whites, beaten until stiff
10 tbsp. sugar
2 baked pie shells

In a heavy skillet, put brown sugar. Add butter, flour, and cream. Mix and stir directly over fire. Cook until as brown as desired. Add egg yolks and milk; mix well. Cook with sugar mixture until thick. Fill baked pie shells and cover with meringue made with beaten egg whites and sugar. Pile this roughly on top and bake 20 minutes at 325 degrees. Makes 2 pies.
