BUTTERSCOTCH PIE FILLING | |
1 c. firmly packed brown sugar 1/4 tsp. salt 5 tbsp. flour 1 tbsp. cornstarch 2 c. scalded milk 3 egg yolks 3 tbsp. butter 1 tsp. vanilla Mix sugar, salt, flour and starch. Add scalded milk gradually and cook over boiling water until thickened and smooth, stirring occasionally. Beat yolks until well blended and add a little of the hot custard. Blend well and stir into remaining custard. Return to heat and cook 2 minutes. Add butter and vanilla; cool. (Use meringue or whipped cream for topping.) |
