DANISH BREAD PUDDING WITH
BUTTERSCOTCH SAUCE
 
3 c. crumbled cold biscuits or light bread
1 c. sugar
2 eggs
1 tsp. vanilla
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. cream
1/2 c. raisins

Combine all ingredients; mix well. Place in a buttered Pyrex dish. Bake in a preheated 350 degree oven for 40 minutes.

Sauce: 3/4 cup sugar, 1/2 cup light syrup, 1/4 teaspoon salt, 1/4 cup butter, 1 cup cream, and 1/2 teaspoon vanilla.

Combine sugar, syrup, salt, butter, and 1/2 cup cream in a saucepan; mix well. Cook over low heat, stirring, to a soft ball stage. Stir in remaining cream. Cook until smooth. Remove from heat and add vanilla. Cool and serve. 6 servings.
