LEMON POKE CAKE 
1 yellow cake mix
1 pkg. instant Jello lemon pudding
4 eggs
3/4 c. water
1/2 c. vegetable oil
2 c. confectioners' sugar
1/3 c. lemon juice

Preheat oven to 350°F. Beat eggs until thick. Add cake mix, pudding mix (dry), water and oil. Beat at medium speed for 10 minutes. Pour into a 10-inch tube pan with removable bottom.

Bake for 50 minutes in preheated oven.

Remove hot cake from pan. Using a 2-tined fork, punch holes in top. Drizzle glaze over top and spread on sides.

To make glaze, combine lemon juice and confectioners' sugar. Heat, stirring often, until boiling and clear. Some of my friends use lemon Jello gelatin mix for the glaze.
