OVEN FRIED CHICKEN 
1 (2 1/2 to 3 1/2 lb.) broiler chicken
1/3 c. butter
1/4 tsp. pepper
1/2 c. dry mashed potato flakes
1 tsp. salt

Pat chicken pieces dry with paper towel. Melt butter in 9 x 13 inch baking pan. Roll chicken pieces in melted butter in pan. Sprinkle with salt, pepper and potato flakes. Bake at 375 degrees uncovered for 1 hour or until tender. Do not turn during cooking.
