ZUCCHINI SQUASH BREAD 
3 eggs
2 c. sugar
2 c. grated zucchini, unpeeled
2 tsp. vanilla (3 if desired)
3 c. flour
1 tsp. salt
1 c. oil (Wesson or Crisco)
1 tsp. baking soda
3 tsp. cinnamon (add extra if desired)
1/2 tsp. baking powder
1 c. chopped walnuts

Preheat oven to 325 degrees. Grease and flour 2 loaf pans. In large bowl beat eggs until light and fluffy. Add oil, sugar, zucchini and vanilla. Mix well. Add flour, salt, soda, baking powder, cinnamon and nuts. Mix well or beat. Pour into pans and bake for 1 hour at 325 degrees.
