ISLAND BROILED CHICKEN | |
1 c. salad oil 1/3 c. lemon juice 3 tbsp. soy sauce 1 clove garlic, minced or 1/8 tsp. garlic powder Chicken pieces or quarters 1 tsp. to 1 tbsp. oregano (to taste) 1 tsp. monosodium glutamate 1/4 tsp. pepper Combine all ingredients except chicken. Let chicken marinate in sauce in refrigerator at least 4 hours. Chicken may be turned over halfway through marinating time. Broil skin side down 5-7 inches from heat for 15-20 minutes or until lightly browned. Brush with sauce halfway through. Turn chicken over. Broil 15-20 minutes longer. When drumstick cuts easily and no pink shows chicken is done. (Mine always takes longer than the times given here.) We also use this marinade on chuck steak. Marinate all day and then broil. |
