SQUASH PIE 
2 lb. yellow squash
1/4 c. chopped onions
3 eggs, well beaten
1/4 c. butter
1 tsp. salt
1/2 tsp. pepper
3/4 c. sugar
15 saltine crackers

Peel squash, cut into medium slices, and remove seeds. Add onion; cook in enough water to cover. Cook well done, stirring occasionally. Drain and mash. Pour in mixing bowl. Add eggs, salt, sugar, pepper and butter. Mix well. Pour into 9-inch casserole. Sprinkle top of squash with crushed crackers. Bake at 350 degrees for 45 minutes.
