SPINACH CHEESE BAKE 
1 pkg. (10 oz.) chopped spinach
8 oz. sharp Cheddar cheese
16 oz. cottage cheese
3 eggs
3 tbsp. flour
1/4 tsp. salt
1/2 tsp. pepper
1/8 tsp. garlic

Preheat oven to 375 degrees. Thaw and drain spinach. Cut Cheddar into small cubes. Beat eggs by hand. Grease 8 x 8 inch baking dish.

Mix all ingredients in a large bowl. Spoon the mixture into baking dish. Bake uncovered 45 minutes. Cool 10 minutes. Serves 4.

OPTIONAL TOPPINGS:

1-2 oz. grated mozzarella & 2 tbsp. almonds
2 tbsp. Parmesan cheese
Sauteed onions
