EGGS BENEDICT | |
4 Healthnut English muffins (halves) 1 lemon 6 eggs 1 pkg. sliced Canadian bacon 1 stick butter In small saucepan add lemon juice and two slightly beaten egg yolks. Stir over low heat, add 1/2 stick butter to mixture and stir until melted, then add remaining 1/2 stick of butter. Stir until melted and mixture thickens. Cover, remove from heat. On cookie sheet place muffins and Canadian bacon. Set aside. In non-stick skillet, cook 4 eggs to desired consistency. Place cookie sheet in broiler and toast muffins. On a plate place muffin, slice of Canadian bacon, egg and top with sauce. Sprinkle with paprika. |
