SPANISH RICE 
6-8 slices bacon
1/4 c. green pepper, chopped
1/2 c. onion, chopped
2 c. canned tomatoes
1/2 tsp. salt
1 1/2 c. cooked rice
1/8 tsp. pepper
1 tsp. paprika
1/2 c. grated cheddar cheese

Heat oven to 375 degrees. Fry bacon until crisp. Remove bacon from frying pan and chop. Place in bottom of casserole dish. Add onion and green pepper to bacon grease and fry until onion is light, golden brown. Place green pepper, onion, rice, tomatoes, salt, and pepper in casserole and mix thoroughly. Sprinkle grated cheese over top and sprinkle paprika over the cheese. Bake 25-30 minutes.
