GREAT GRANDMOTHER'S HOT POTATO
SALAD
 
6-8 strips bacon
1 med. onion, to taste
1/4-1/2 green pepper
1/2 c. vinegar
2 c. water
1/2 c. sugar
2 tbsp. flour
1 tsp. salt
1 tsp. pepper
4-5 med. potatoes, boiled & diced

Fry bacon, drain on paper towels. Remove all grease from pan except 2 tablespoons. Brown onions and green peppers in this. Then add vinegar, water, sugar, flour. Stir to mix and cook 3 to 4 minutes. Add potatoes, fold to mix. Don't break up potatoes. Add bacon and crumple up. Cover and let sit 1/2 to 1 hour on low heat so flavor goes through. Serves 4 to 6. Serve with sausage. We like Hillshire smoked sausage.
