CHEESE GRITS 
1/2 c. uncooked 5 minute grits
1 c. water
1/3 c. milk
1 large egg
1/4 tsp. salt
4 tbsp. butter
8 oz. shredded sharp Cheddar cheese
1/2 tsp. hot sauce
paprika to taste

Cook grits in water according to package instructions. Add remaining ingredients except paprika and mix. Place in greased 1 1/2 qt. casserole. Sprinkle with paprika.

Bake at 350°F for 35 minutes uncovered.

Serves 4 - 6.

This is, of course, a traditional breakfast side dish. However, you can sauté some shrimp seasoned with Creole seasoning and serve them over the grits in a bowl with some chopped green onions and country ham and produce a classic South Carolina "low country" entree.
