LOW CHOLESTEROL SPAGHETTI ESTIVI 
1 lg. can tomatoes or 6 lg. fresh peeled tomatoes
1/3 c. olive oil
1/2 can tomato paste
2 lg. garlic cloves
1 c. fresh parsley or 1/2 c. parsley
1/2 c. basil
1/2 tsp. salt
Juice 1/2 lemon pepper
Optional:
Pinch red pepper
3 fillets of anchovies

Prepare spaghetti. Heat plates for serving. Blend sauce in processor or blender. Serve immediately on plate with plenty of Parmesan. Serves 4.
