DIET CRANBERRY POPPY SEED
MUFFINS
 
1 1/2 c. all-purpose flour
1/2 c. oat bran
1/2 c. dried unsweetened cranberries
1/4 c. sugar
2 1/2 tsp. baking soda
2 tsp. poppy seeds
1 c. fresh orange juice
egg substitute or 1 large egg
1/4 c. unsweetened applesauce
2 to 3 tsp. grated orange zest
1 tsp. vanilla extract or 1/2 tsp. almond extract

Lightly spray a 12-cup muffin pan or use paper muffin cups. Stir together flour, oat bran, cranberries, sugar, baking powder and poppy seeds in large bowl. Make a well in center. In another medium bowl, whisk remaining ingredients and pour into the well in the flour in the large bowl. Stir enough to moisten flour. Do not overmix. Batter should be lumpy. Fill muffin cups about half full.

Bake at 375°F for 14 to 15 minutes or until toothpick inserted in middle of muffin comes out clean. Remove from oven and cool.

Makes 12 muffins.
