POPPY SEED MUFFINS 
2 1/2 c. flour
1/2 c. sugar
1/4 c. poppy seeds
3 tsp. baking powder
1 1/4 c. milk
1 egg
2 tsp. vanilla
1 tbsp. grated lemon peel

Mix dry ingredients. Add wet ingredients and stir until blended. Put into paper baking cups. Bake at 350 degrees for 20 minutes. Makes 12 muffins.

Hi Bethany,

They're not meant to be very sweet. If that's not what you're looking for, you might want to double the sugar from 1/2 to 1 cup; if you like a more pronounced lemon taste try using some lemon oil or lemon extract. I wouldn't add much more than the 1 tablespoon of lemon zest already called for (which is actually quite a lot!). Make sure, also, that you use freshly grated lemon peel rather than the store bought kind, which doesn't have much flavor at all.
