POTATO AND APPLE PANCAKES 
1 egg
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1 apple (chopped fine)
1 lb. potatoes (about 3)
2 tbsp. oil
Sour cream (optional)

Heat oven to 250 degrees. Beat together egg, flour, salt and pepper.

Peel and chop the apple - peel potatoes and grate them. Stir the apple and potatoes into the egg mixture.

Heat 1 tablespoon oil in a large frying pan over medium heat. Pour in about 1/3 cup of batter for each pancake and flatten.

Fry as many pancakes as you wish at a time, without crowding. Cook until golden, 3 to 4 minutes on each side.

Keep pancakes warm in the oven while cooking the remaining batter. Add oil as needed. Serve with sour cream if desired. Makes 8 pancakes.
