APPLE PANCAKES 
2 c. all-purpose flour
2 tbsp. sugar
4 tsp. baking powder
1 tsp. salt
2 well beaten egg yolks
2 c. milk
2 tbsp. melted butter
1 c. beaten egg whites
1 c. finely chopped apples

Stir together dry ingredients. Combine egg yolks and milk. Pour into dry ingredients; stir well. Stir in apples and butter. Fold in egg whites. Let batter stand a few minutes. Bake on a hot griddle using 1/3 cup batter for each. Dot with butter and sprinkle with powdered sugar and roll up. Makes 12 pancakes.
