ZUCCHINI CASSEROLE 
5-6 zucchini
1 lg. tomato
Handful of mushrooms (optional)
1 sm. can green chili salsa
1 red onion
1 sm. can green chili salsa
1 can pitted olives
Approximately 1/2 lb. cubed Jack cheese

Saute sliced zucchini in small amount of oil. Add sliced red onion, green chili salsa, chopped tomato and sliced mushrooms. Cook until zucchini is just tender.

Layer in 2-quart casserole. Start with olives, cheese, zucchini mixture. Bake at 350 degrees about 20 minutes or until cheese is melted and bubbling.
