SOUTHWESTERN ZUCCHINI CASSEROLE 
1 1/4 lb. zucchini, cubed
1/2 lb. each Monterey Jack & sharp Cheddar cheese
2 tsp. baking powder
3 tbsp. flour
4 eggs, beaten
1/2 c. milk
1/2 tsp. salt, optional
1 (4 oz.) can green chilies
3 tbsp. butter

Boil zucchini in salted water 5 minutes. Drain and cool. Mix remaining ingredients with zucchini (except butter). Pour into a 9 inch square pan. Dot with butter. Bake at 350 degrees for 30-35 minutes. (Use more chilies if desired.)
