ZUCCHINI CASSEROLE 
1 lb. ground beef, ham or sausage
2 tbsp. salad oil
1 (8 oz.) can tomato sauce
1 green onion, chopped
1 c. grated cheddar cheese
1/4 tsp. pepper
4 zucchini, sliced
2 onions, chopped
10 oz. can Rotel tomato & green chilies
1 (6 oz.) can tomato paste
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. garlic salt
1/2 c. Parmesan cheese

Saute meat, onions and salad oil until meat is brown. Add Rotel tomatoes, tomato sauce and paste, oregano, salt, pepper and garlic salt. Add zucchini. Simmer 10 minutes. Put into shallow 3 quart casserole dish and sprinkle with cheese. Bake at 350 degrees for 45 minutes.
