GREEN CHILIES CASSEROLE 
1 (4 oz.) can diced green chilies
Zucchini squash
Monterey Jack cheese, grated
2/3 c. Bisquick
2 eggs
1 1/2 c. milk
Salt & pepper to taste

Mix together the preceding ingredients. Line an 8 inch square casserole with diced chilies. Add a layer of sliced zucchini and a layer of grated Monterey Jack cheese. Repeat until you have 4 layers. Mix together in a separate bowl the Bisquick, eggs, milk and salt and pepper. Pour over zucchini and bake at 350 degrees for 45-50 minutes.
