ZUCCHINI CASSEROLE 
LAYER 1:
1 1/2 lbs. diced, unpeeled zucchini
1 med. onion, chopped
1 (4 oz.) can chopped green chilies, drained
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper

LAYER 2:
1 1/2 c. shredded Monterey Jack cheese

LAYER 3:
1 egg
1 c. cottage cheese
2 tbsp. chopped parsley

LAYER 4:
1/2 c. Parmesan cheese

Saute in melted butter the zucchini and onion; add the chilies, flour and salt. Place this in a greased 9"x13" baking pan. Spread second layer (Monterey Jack) on top. Add third layer, mixture of egg, cottage cheese and parsley on top and sprinkle with Parmesan cheese. Bake at 400 degrees for 25 to 30 minutes, uncovered.
