YELLOW SQUASH CASSEROLE 
3 c. sliced or shredded squash
1 med. onion
1 pkg. herbed stuffing mix
1 (8 oz.) carton sour cream
1 can cream of chicken soup, undiluted
1/2 stick butter
Salt & pepper to taste
2 c. cooked chicken or turkey

Saute squash and onion in butter until tender. Mix with all other ingredients. Place in greased baking dish and bake 35 to 40 minutes in 350 degrees. Shred squash and put 3 cups in ziplock bag and freeze. Cook chicken parts, take off of bone. Put 2 cups in ziplock bag and freeze. Zucchini can be used instead of squash.
