SUMMER SQUASH CASSEROLE | |
8 medium yellow squash, cooked until tender 1/2 stick butter, melted 1/2 c. shredded Cheddar cheese 3/4 c. milk 2 eggs, beaten 1 tbsp. grated onion salt and pepper to taste Drain cooked squash thoroughly. While squash is draining, combine remaining ingredients in large bowl. Mash squash in colander with back of spoon. Transfer drained and mashed squash into bowl with other ingredients. Mix. Pour into greased casserole dish. Bake at 400°F for 20 minutes or until set. |
