PUMPKIN ROLL 
2/3 c. pumpkin
3/4 c. flour
1 c. sugar
3 eggs
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. lemon juice
1/2 tsp. salt

Grease and flour cookie sheet. Mix all ingredients together. Pour into a prepared cookie sheet. Bake in 350 degree oven for approximately 10 minutes. Have towel ready. Take from oven and turn onto towel. Roll up tight; put in refrigerator for one hour. Prepare filling.

FILLING:

1 (8 oz.) cream cheese
1 c. confectioners sugar
4 tbsp. butter
1 tsp. vanilla

Mix together.

Unroll cake. Spread with filling and roll up. Put in aluminum foil and refrigerate. Serve 8. (One can pumpkin makes 2 cakes.)
