COLCANNON 
1/2 sm. turnip
5 med. potatoes
1/2 sm. cabbage
1 leek or small onion
1/4 c. butter
1 tbsp. fresh parsley, chopped
Pinch of mace
Salt & pepper to taste

Peel turnip and potatoes and cut in 1 inch cubes. Chop cabbage and leek or onion. Place turnip and potatoes in a large saucepan with enough salted water to cover. Bring to a boil, reduce heat and simmer, covered, for 20 to 30 minutes. Add cabbage and leek or onion for the last 10 minutes of the cooking time. Drain vegetables and return to saucepan. Mash and add butter, parsley, mace and salt and pepper to taste. Serves 6 to 8 persons.
