IRISH COLCANNON 
6 med. potatoes, peeled and quartered
4 c. cabbage, shredded
1 c. chopped onion
1/4 c. butter
1/2 to 3/4 c. milk
1 tsp. salt
1/8 tsp. pepper
1 tbsp. parsley

Cook potatoes in water until tender; drain. Cook cabbage and onion together in a small amount of boiling water for 15 minutes; drain. Mash potatoes using an electric mixer. Beat in butter and enough milk to make fluffy. Add salt and pepper. Stir in cabbage mixture and top with parsley before serving.

This is a popular Irish dish served during the winter months.

I found this recipe here a few years ago and have made it many times since. I get rave reviews every time. I always use 8 oz. cream cheese and sometimes sour cream in place of the milk. Sometimes I add a few cloves of sauteed garlic too.
