COLCANNON 
1 lb. all purpose potatoes
1 lb. green cabbage (4 c. shredded)
1 lg. onion, shredded
3 oz. cheddar cheese, grated
Salt and pepper

Cook potatoes and mash with milk and butter. Save potato water and cook cabbage and onion about 5 minutes. Drain and add to potatoes. Mix 2/3 of cheese, salt, and pepper to above. Put in greased casserole. Sprinkle remaining cheese on top. Bake at 350 degrees until cheese is slightly browned.
