CHOCOLATE MOUSSE CAKE 
14 eggs, separated
14 oz. chocolate chips, melted
1 c. sugar, less 2 tbsp.
1 lb. (4 sticks) unsalted butter or unsalted butter
Less 2 tbsp. at room temperature

Mix egg yolks, sugar, butter and melted chocolate and beat for at least 10 minutes (the original recipe calls for at least 45 minutes of beating). Beat egg whites until firm but not dry. Fold gently into egg yolk mixture.
