LOW CAL CHICKEN CACCIATORE 
4 chicken breasts, skinned
2 sm. green peppers, minced
1 clove garlic, minced
2 tbsp. pimentos, chopped
1 bay leaf
1/8 tsp. thyme
1 tbsp. dried parsley
1 c. mushrooms, chopped
2 c. stewed tomatoes

Combine all ingredients; simmer 45 minutes. Serve over cooked rice. Serves 4. 159 calories per serving.
