MANGO CAKE 
1/2 c. shortening
1 c. sugar
2 eggs, beaten
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1 c. finely chopped mangos
1 tbsp. lemon juice
1/2 c. chopped nuts

Preheat oven to 375 degrees. Grease a 9-inch square cake pan.

In large bowl of electric mixer, cream shortening and sugar. Beat in eggs until mixture is fluffy. Sift flour with baking powder and salt, stir into cream mixture. Fold in mangos, lemon juice and nuts. Pour into prepared pan and bake for 35 to 40 minutes. Makes 9 servings.
