MANGO - JALAPENO SALAD | |
8 to 12 firm-ripe mangos (or 2 lg. jars fresh sliced mangos as sold at Fiesta) 2 sweet onions (such as a Texas 1015), thinly sliced 8 fresh jalapenos, seeded & slivered (those in a jar work fine) 1/2 c. light oil 1 1/2 c. cider vinegar Salt & pepper to taste Dash of sugar to taste If using fresh mangos, peel and slice. Combine mango and onion slices with jalapeno. Make a dressing by stirring the oil, cider vinegar, salt, pepper and sugar together. Mix gently but well with mangos. Let stand 2 hours or more before serving. Serves at least 10. |
