MANGO CAKE 
4 eggs
1/2 c. vegetable oil
2 c. unsifted cake flour
2 tsp. cinnamon
1 tsp. nutmeg
1/2 orange rind, grated
1/2 lemon rind, grated
1 c. chopped walnuts
1 1/2 c. sugar
1 c. honey
2 tsp. baking powder
1 1/2 tsp. baking soda
2 c. mango, diced fine
1/2 c. raisins

In a large bowl, beat eggs until fluffy; beat in sugar, then oil. Gradually add honey. Combine flour, baking powder, cinnamon, baking soda and nutmeg. Mix well and add to mixture in 4 parts. Dust mango, nuts and raisins with a little flour. Stir in mangos, grated rinds, walnuts and raisins.

Bake in a lightly oiled and floured Bundt pan. (There is enough for a small loaf pan also.) Oven should be 350 degrees for 40-45 minutes or until edges separated from pan. You may want to spread topping over cake or use 1/2 cup powdered sugar blended with 1 tablespoon orange juice when cold.
