BAKED HERB CHICKEN 
1 c. commercial herb stuffing, crushed
1/3 c. freshly grated Parmesan cheese
1/4 c. finely chopped fresh parsley
1 clove garlic, minced
1 (3 lb.) frying chicken, cut up
1/4 lb. butter, melted

Preheat oven to 350 degrees. Combine stuffing, cheese, parsley, and garlic. Set aside.

Dip chicken pieces in melted butter and then in stuffing mixture, coating thoroughly. Place chicken pieces, not touching on a cookie sheet or shallow baking pan, skin side up. Bake, uncovered, for 45 minutes to 1 hour, turning oven down if chicken browns too quickly. Chicken may be baked ahead and served at room temperature.

NOTE: Use steel blade in food processor to crush stuffing and grate fresh Parmesan cheese.
