LIGHT 'N CRISP WAFFLES 
Especially light. No-fail.

2 egg yolks
2 c. milk
2 c. flour
1 tbsp. baking powder
1/4 tsp. salt
1/3 c. oil
2 egg whites, stiffly beaten

Mix all ingredients, except egg whites, in mixing bowl. Beat at low speed until moist, increase to medium speed, mix until smooth. By hand, gently fold in stiffly beaten egg whites.

Preheat waffle iron, pour 1/2 cup batter onto griddle. Bake 2 1/2 to 3 minutes or until golden brown. Serve with your favorite topping.
