HAWAIIAN BANANA NUT BREAD | |
4 c. all-purpose flour 3/4 tsp. salt 2 c. sugar 1 tsp. baking soda 1 tsp. ground cinnamon 1 c. chopped pecans 3 eggs, beaten 2 c. mashed ripe bananas 1 c. vegetable oil 8 oz. crushed unsweetened pineapple 2 tsp. vanilla Combine first 5 ingredients, stir in pecans. Make a well in center. Combine fruits, oil, vanilla and eggs. Stir into dry ingredients just until moistened. Pour into 2 loaf pans. Bake at 350 degrees for 1 hour 10 minutes or until wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans and let cool on wire racks. |
