CHINESE CHICKEN 
3 whole chicken breasts (boneless), (slightly frozen), cut in bite size pieces

Marinate in - (about 30 minutes) :

4 tbsp. soy sauce
2 tbsp. water
1/2 tsp. pepper
4 tsp. corn starch
2 tsp. corn oil

Mix in a bowl:

1 c. chicken broth
4 tsp. corn starch

Heat 1/4 cup corn oil in a wok or heavy pan and add:

4 toes garlic, sliced (brown and discard garlic, then add)
4 c. sliced fresh mushrooms
1 c. water chestnuts, chopped

Cook for 1 minute and lift out to add later. Add 1/4 cup oil to oil left in wok, heat to hot and add marinated chicken. Stir fry until tender. Add all ingredients and heat to hot - stir often. Serve over hot white rice.
