CHINESE FRIED RICE | |
6 c. cold, boiled rice 5 eggs 6 scallions, cut into 1/4" pieces 3/4 c. boiled ham, diced 3 tsp. salt 12 tbsp. peanut or corn oil 2 cans bean sprouts Beat eggs and lightly scramble with 2 tablespoons of oil. Set aside. Heat 6 tablespoons of oil over high flame in heavy skillet. Add scallions and saute. Add rice and salt, mixing thoroughly. Add ham, bean sprouts and eggs, mixing well and serve. Rice must be cold before frying. Break rice up while still hot and let stand until ready to use. Leftover fried rice can be reheated in oven without additional water or oil. It can also be frozen. |
