CHINESE FRIED RICE 
2 c. long grain rice
6 slices bacon, cut into 1/2 inch strips
3 chicken breasts, deboned & cut into bite size pieces
Salt & pepper
1/4 tsp. garlic powder
1/4 c. soy sauce
3 to 4 eggs
6 stalks green onion, cut in 1/4 inch strips

Fry bacon strips in deep skillet until brown and remove from skillet. Fry chicken until they turn white, season with salt and pepper; remove from skillet. Spoon out excess oil, leaving just enough to cover bottom of skillet. Break eggs into skillet and scramble. Add the 2 cups of boiled rice. Make sure all rice lumps are broken up. Mix rice and eggs vigorously and then add all your fried meats, stirring them together. Sprinkle soy sauce over everything and try to get an even color. Add green onions and stir in as a garnish.
