CHINESE FRIED RICE 
2 eggs, beaten
4 tbsp. cooking oil
1 c. cooked chicken, diced
1/4 c. green onion, chopped
4 tbsp. soy sauce
1/2 tsp. sugar
4 c. cooked rice

Make a thin scrambled egg pancake (without adding milk or water to eggs) using 1 tablespoon of oil. Set aside. Heat remaining oil, add rice and green onion and stir so the rice does not stick. Stir until coated with oil. Sprinkle with soy sauce and sugar. Mix well and add meat and egg, cut up in strips. This works real well in electric fry pan.
