CHINESE FRIED RICE 
2 eggs
1/2 tsp. salt
Dash pepper
3 tbsp. butter
2 tbsp. chopped onion
1 1/3 c. Minute rice
1/2 tsp. salt
1 1/3 c. water
2 tsp. soy sauce
1/4 tsp. sugar

Beat eggs, add 1/2 teaspoon salt and pepper. Melt butter, fry eggs. Remove and cut in thin strips, saute onion until lightly browned. Add rice, water and salt. Bring to boil. Cover and remove from heat. Let stand 5 minutes. Add egg, soy sauce, sugar and reheat.
