BESSIE SCOTCH COOKIES 
4 c. plain flour
2 c. brown sugar
1 c. Crisco or butter
1 c. chopped pecans
2 eggs, beaten
1 tsp. cream of tartar
1 tsp. baking soda
3 tbsp. hot water
1 tsp. vanilla
1/4 tsp. salt

Cream sugar and butter, add eggs, beat in cream of tartar. Add soda (dissolved in hot water), vanilla, flour and nuts. Shape dough into rolls, cover and refrigerate overnight. Slice and bake 6 to 8 minutes on 375 degrees.
