SCOTCH OATMEAL COOKIES | |
3/4 c. shortening 1 c. sugar 2 1/2 c. quick oatmeal (not instant) 1 1/2 c. flour 1/2 tsp. salt 1 tsp. cream of tartar 1 tsp. baking soda 1/2 c. cold water Cream shortening and sugar. Add oatmeal. Combine flour, salt, cream of tartar and soda and add to creamed mixture. Add cold water. Roll out THIN on well floured board. Cut and bake on greased cookie sheet. (Put scraps in plastic bag as you roll to keep dough from drying out. Re-roll and re-roll!) Put together with filling. FILLING: 1 pkg. dates, cut fine 1 c. sugar 1 tbsp. flour 1 c. boiling water Cook dates, sugar, flour and water until thick, beat smooth and cool. (I use Dromedary chopped dates - the same price as whole dates and much less messy. Any filling remaining keeps well in a jar in the refrigerator.) |
