BEEF ENCHILADAS | |
2 lb. hamburger 1 env. taco mix 2 lb. Monterey Jack cheese, grated 1 sm. onion, diced 1 can enchilada sauce 2 dozen corn tortillas Brown hamburger, drain fat, put back to stove and add taco mix and 1/2 cup water. Cover and simmer for 10 minutes. Fry tortillas on a skillet with oil, both sides, about 5 to 8 seconds just enough to soften. Put the enchilada sauce on a flat container, and dip each tortilla in it. Put hamburger, cheese and onion on each tortilla and roll, like a burrito. Put them on a baking dish. Sprinkle some cheese and onions on top of enchiladas. Bake at 375 degrees for 30 minutes. If enchilada sauce is too hot for you, add 1 (8 oz.) can tomato sauce to enchilada sauce. You can also make them with chicken. |
