BEEF ENCHILADAS 
3 cans mild enchilada sauce
1 lb. hamburger
1 bunch spring green onions
1 sm. sour cream
10 oz. Montgomery Jack cheese
1 (1 dozen) pkg. flour tortillas

Heat enchilada sauce (add water if needed to spread). Cook hamburger. Chop onions and grate cheese. Lay out tortilla and put sauce inside to coat. Put hamburger in line in center. Sprinkle onions and cheese. Take 3 tablespoons sour cream and dot top. Roll up and set in pan with fold down. One dozen fits into 11 x 15 inch jelly roll pan. Spread more sauce over top. Be sure is covered well. Sprinkle more cheese over top. Bake uncovered in greased pan for 30 minutes at 350 degrees just until cheese melts - don't over cook!
