PETITE CHERRY CHEESECAKES 
2 (8 oz.) pkg. cream cheese
2 eggs
1 tsp. vanilla
3/4 c. sugar
1 tbsp. lemon juice
24 vanilla wafer cookies
1 (21 oz.) can cherry pie filling

Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Line muffin pans with paper baking liners and place in vanilla wafers on the bottom of each cup. Fill the cups 2/3 full with cream cheese mixture. Bake in 375 degree oven for 15 to 20 minutes or until set. Cool. Top each with about 1 tablespoon pie filling. Chill. Makes 2 dozen.
