CRYSTAL'S EASY SPAGHETTI WITH SAUTEED VEGETABLES | |
The vegetables give such an aroma and fantastic taste! 1 red medium pepper 1 green medium pepper 1 yellow medium pepper 1 orange medium pepper (optional) 1 large Spanish onion (or any onion you like) 2 tbsp. olive or canola oil 1 (16 oz.) box spaghetti 1 (24 oz.) jar spaghetti sauce (your favorite) Cut into strips the first 5 ingredients. Add them to 2 tablespoons of lightly heated olive or canola oil (add more oil if necessary). Sauté them til very tender (about 10 minutes). Drain and put on paper towel (cover with foil to keep warm). Prepare spaghetti according to package directions. Drain/add spaghetti and add spaghetti sauce and vegetables together in a large bowl (I use a pretty one for presentation at the table). Mix until everything is thoroughly coated with sauce. Serve with lightly toasted garlic bread and voila! Tip: can use many variations to the sautéing of veggies. For a complete meal add cooked ground turkey in the mix. Perfect for a last minute meal!!
